BRIGHAM City-January 23 is National Pie Day and Hill Billy Hand Pies in Brigham City is a unique name for a bakery that specializes in making all kinds of them. They are all about baking hand pies, mini pies and classic sized pies.

Located at 499 S. Main St Unit 101in Brigham City is a corner store with large painted with large colorful lettering enticing people to try their wares.

They specialize in traditional and non-traditional pies. Rachel Berry, the baker and part owner said they have grown exponentially in the last three years since they opened their doors.

When a person enters their store they are greeted with a glass case with cookie sized pies, 6 inch pies and full sized pies. Some have fruit, some have cream and some have other ingredients.

The Hill Billy Hand Pie has a historical meaning from the Civil War times Berry said.

“My favorite is the Hillbilly Pie,” she said. “There was a time when pecans were hard to come by so people used other ingredients. We use oatmeal.”

Instead of a large oven she uses three small confection ovens.

“I used to bake pies with my mom, when I was younger and I enjoyed it,” Rachal said. “I still enjoy making pies.”

Rachal and her husband Shawn worked in retail for 20 years and decided to change their lives. He is an independent Mixed Marshal Arts Fighter, and she runs the pie shop. They got tired of life in Salt Lake City and decided to move to a more rural place.

“We came to Brigham City and opened the shop,” she said.” We love Brigham City it is a wonderful place and the people here  have treated us really good.”

She said they make over 160 different flavors of pies in the little shop.

“Our savory pies sell well. They’re meat pies,” Rachel said. “We make them with chicken, beef or pork.”

They also make their own handmade no-churn vanilla ice cream and pie shakes. Along with the pies and ice cream, they offer a drinks off of their original Dirty Soda menu.

People can also order a slice of pie or pie jars, pie zones and six-inch mini pies.

Besides pies they also cook French bread, cheesy rolls, pizza rolls, meat hand pie and pot pies.

If someone comes in and wants to make their own personal pie she has the frosting, peanut butter whipped cream, cream cheese frosting and other ingredients to customize a pie.

The store has a rack with a bunch of religious literature.

“We encourage positivity,” Rachel said. “The Mennonites from Tremonton bring in the publications and if can help people they are welcome to it.”

Store hours are Monday through Friday 12 p.m. until 8 p.m. and Saturday from 10 a.m. until 8 p.m.
